Lemon posset
Ingredients: Serves 6 shot glasses
200ml double cream
60g caster sugar
Zest of 1 lemon
Juice of half a lemon
Method:
Put the cream and sugar in a saucepan. Heat gently stirring continuously until sugar has dissolved. Bring to a simmer, add the lemon zest and keep at a simmer for 1 minute. Take off the heat and stir in the lemon juice. Divide between shot glasses, cool to room temperature and chill for at least 3 hours.
Good for dinner parties and can be made the day before.
