Paprika beef casserole
Ingredients
1 lb Lean braising beef
1 Large carrot sliced
1 Parsnip, cubed
1 oz Butter (25g)
1 oz plain flour
1 Tbsp Tomato purée
1 Pint Beef Stock
2 Bay leaves
1 Bouquet garni
6 Small shallots
Salt to taste
Fresh Ground Black Pepper
1 tsp Paprika
Directions
Preheat oven to 180 degrees C.
Cut beef into 2 cm cubes Melt butter in casserole dish, add meat and sauté until brown.
Add shallots, carrot, parsnips.
Sprinkle flour over and stir thoroughly.
Add stock, stir until smooth.
Add bouquet garni and bayleaves.
Season with pepper, salt and paprika.
Put casserole in oven for about 2hrs.
Serve with croquette or baked potatoes or freshly baked bread.
