Makes about 2 jars


500 g pumpkin, peeled and diced (seeds removed)

100ml orange juice

500g sugar


Put the pumpkin chunks into a large pan with the orange juice. Bring to the boil and simmer until tender. Remove from heat and mash slightly with a potato masher or a blender (depending on how chunky you like your jam)

Whilst pumpkin still warm, add the sugar. Melt the sugar on a low heat, stirring all the time. When sugar is melted, bring mixture to the boil and cook until it reaches 104 degrees C. 

Pour into sterilised jars and store in a cool dry place.
