Cream of Mushroom
Ingredients
400 g Sliced mushrooms
100 g Butter
100 g plain flour
1100 ml Stock (lamb is good)
Seasoning
Directions
Fry mushrooms in butter
Add flour off the heat and stir (as making a white sauce)
Add stock a little at a time, stirring all the time.
Bring to the boil stirring all the time
Reduce heat, simmer for about 20 mns.
Cool and put in blender to make smooth mixture.
Reheat to serve with garlic or cheesy croûtons
