Salmon with cheesy potatoes and broccoli
Peas or green beans work just as well as a side.
● 500g baby new potatoes, halve
● 3 egg
● 30g sunflower spread
● 30g plain flour
● 400ml skimmed milk
● 80g Morrisons NuMe reduced fat Cheddar
● 400g broccoli floret
● 240g pack salmon fillets, cut into chunks
● 30g breadcrumb
● 2 tbsp olive oil
1. Heat the oven to 200°C/180°C fan/Gas 6. Cook the potatoes in boiling water for 10 minutes.
2. Hard-boil the eggs for 8 minutes, refresh in cold water, peel and quarter.
3. Melt the spread in a pan, keep over the heat as you add the flour and milk, stirring until the sauce thickens. Grate the cheese and stir it in.
4. Boil the broccoli for 5 minutes, drain well. 5. Arrange the potatoes, eggs, salmon and broccoli in an ovenproof dish, and drizzle with the cheese sauce. Mix together the breadcrumbs and oil and scatter on top. Bake for 20 minutes
