Yorkshire puddings

Ingredients:

70g plain flour

1 egg

100ml milk

Fat for the pudding dish

(Makes 4 medium sized yorkies, scale for more)

Method:

Mix in the milk and flour and season. Whisk in the egg. When making larger quantities add the eggs in one at a time. Chill in the fridge for at least 30 minutes or up to a day.

Heat an oven to 220c and but in a pudding tray with a little fat at the bottom. I use duck or goose fat but sunflower oil works just as well. When oven is hot and fat is melted ladle the mixture into the tray and cook for 30 minutes or until well browned.
