Ingredients- 3 Cooking apples (cored) russets or bramleys
- Drop vanilla essence
- 50 g unsalted butter, softened
- 50 g Golden caster sugar (or soft brown sugar and white caster sugar mixed)
- 50 g Sultanas
- 1 tsp Thick honey
- 1 Pinch ground ginger
- 1 Pinch ground cinnamon
- lemon juice
Directions- Preheat oven to 180 degrees C
- Place cored apples in ovenproof dish
- Mix all other ingredients except lemon juice in a bowl until soft mixture is obtained.
- Put mixture inside middle hole of each apple dividing equally. The mixture will spill over, just pile it on the top of each apple.
- Put a little lemon juice over the apples before putting in the oven.
- Bake in hot oven for 20-25minutes until soft and slightly caramelised
- Serve still hot/warm with cream or custard or ice-cream.
