Baked apples

  • 3 Cooking apples (cored) russets or bramleys
  • Drop vanilla essence
  • 50 g unsalted butter, softened
  • 50 g Golden caster sugar (or soft brown sugar and white caster sugar mixed)
  • 50 g Sultanas
  • 1 tsp Thick honey
  • 1 Pinch ground ginger
  • 1 Pinch ground cinnamon
  • lemon juice

  1. Preheat oven to 180 degrees C
  2. Place cored apples in ovenproof dish
  3. Mix all other ingredients except lemon juice in a bowl until soft mixture is obtained.
  4. Put mixture inside middle hole of each apple dividing equally. The mixture will spill over, just pile it on the top of each apple.
  5. Put a little lemon juice over the apples before putting in the oven.
  6. Bake in hot oven for 20-25minutes until soft and slightly caramelised
  7. Serve still hot/warm with cream or custard or ice-cream.
