Sausage and bean casserole

  • 6 Lincolnshire sausages
  • 1 Yellow or red pepper
  • 1 1/2 oz plain flour
  • 1/2 Chorizo sausage
  • 1/4 Pint Stock
  • 4 oz Fresh Mushrooms (Sliced)
  • 1 Box Passata
  • 2 Tins Mixed beans (butter and red kidney)
  • Seasoning to taste (salt, pepper, italian herbs and garlic powder)

  1. Preheat oven to 180 degrees centigrade
  2. Brown the sausages in a thick based oven proof dish. When brown, put aside and fry shallots, pepper and mushrooms until soft but not brown.
  3. Sprinkle flour over, stir and add stock off the heat. Cook on top for approximately 10 minutes until thick.
  4. Add the sausages, chorizo and passata. Stir well. Season to taste.
  5. Place in a pre-heated oven and cook for about1 hour on 180 degrees centigrade.
  6. Serve hot with crusty bread (or garlic bread if preferred)
