Gumbo

Ingredients: (serves 2)

150g Prawns

4 rashers Bacon

340g passata

2 tomatoes

1 onion

1 bell pepper (8 okra if available)

1 chilli

1 cup risotto rice

Method:

Traditionally gumbo is made with anything you have got, above ingredients can generally be replaced by whatever you fancy. Chicken instead of prawns works well, celery is a good addition. Stock can be used instead of passata.

Dice the bacon and fry up in a pot. Once brown, add the sliced onion and prawns. Once, the prawns are pink add the diced pepper and chilli. After these have softened add the finely chopped tomatoes. Add the risotto rice and allow to soak in the juices. Add passata and some water to loosed. Leave to simmer for approximately 30 minutes. Before serving add a splash of rum.
