Coconut stuffed peaches

  • 8 Canned Peaches halves
  • 50 g Butter (Soft)
  • 50 g caster sugar
  • 50 g Dessicated coconut
  • Jam sauce or strawberry coulis

  1. Put the peaches halves without the syrup into an ovenproof dish hollow side up
  2. Blend butter, sugar and coconut together.
  3. Put into each half peach and heat under the grill for a few minutes (until top is slightly golden)
  4. Serve with hot or cold jam sauce (made with strawberry jam, the syrup from the peaches and a little arrowroot to thicken) or strawberry coulis
