Fish pie

Ingredients

• • 1 Kg Potatoes, peeled

  • 375 g Smoked cod

  • 350 g Cod, haddock or salmon (or a mixture) and a few large prawns

  • 1 Onion (Chopped)

  • 2 Bay leaves

  • 3 Peppercorns

  • 300 ml Milk

  • 75 g Butter

  • 1 Tbsp plain flour

  • 125 g Frozen peas

  • A little lemon juice

  • Salt and pepper

  • 150 ml Double cream

  • 50 g Cheddar or similar cheese

Directions

• 1. Preheat oven to 180 degrees C

  2. Boil potatoes until tender. Drain and keep aside in a covered pan

  3. Meanwhile, place fish, onion, bay leaves and peppercorns in a pan

  4. Add milk, simmer until tender

  5. Remove fish, strain keeping milk for sauce

  6. Flake the fish discarding skin and any bones. Keep aside.

  7. Make white sauce using 25g of butter, the flour and the milk from the fish (slightly cooled).

  8. Add fish and peas to the sauce

  9. Make the mash adding 25g of butter and the cream to the potatoes. Season.

  10. Spoon the fish mixture into a large ovenproof dish, top with the mash

  11. Decorate top with a fork and sprinkle with the grated cheese

  12. Bake in preheated oven for 20 minutes until hot andgolden

  13. Serve as it is or with broccoli
