Date and ginger pudding

Ingredients:

85g Salted butter

200g dates

200ml milk

Vanilla essence

1tsp Bicarb

140g Self-raising flour

85g Muscovado sugar

2 eggs

1 root ginger

Method:

But the dates and milk into a pot and bring to the boil. Take off the heat and add bicarb and and vanilla essence. Finely grate the ginger and add to the flour. Add sugar, butter and eggs to the mix. Beat for 5 minutes then fold in the date mix. Bake for 40 minutes at 180C.
