- 1 lb Potatoes,sliced
- 1 Onion, sliced
- Salt & Pepper
- 15 g Dripping or butter
- 1/8 L Meat stock
- 200 g Corned beef, chopped
- Melt the fat and fry the onions without browning.
- Put the sliced potatoes and onion in an ovenproof dish, add the stock, season and put in a warm oven (180C) for about 1h or until,potatoes are tender
- Check that the stock doesn't run out.
- Add the corned beef and cook for a further 10-15 mn.
- Serve with green vegetables and oatcakes
