  • 1 lb Potatoes,sliced
  • 1 Onion, sliced
  • Salt & Pepper
  • 15 g Dripping or butter
  • 1/8 L Meat stock
  • 200 g Corned beef, chopped
  1. Melt the fat and fry the onions without browning.
  2. Put the sliced potatoes and onion in an ovenproof dish, add the stock, season and put in a warm oven (180C) for about 1h or until,potatoes are tender
  3. Check that the stock doesn't run out.
  4. Add the corned beef and cook for a further 10-15 mn.
  5. Serve with green vegetables and oatcakes
