Ginger rum

Makes 750ml

Ingredients:

3 thumbs of ginger root

1 cup sugar

1 cup water

500ml rum

Method:

Wash the ginger root. Cut into 1cm cubes keeping on the skin. Make a simple syrup by adding the sugar and water to a pot and heat until dissolved. Once dissolved, add the ginger and boil for 5 minutes. Let the mixture  cool to room temperature (approx 30 mins). Add the mixture to a large mason jar and top up with the rum. After 2 week separate most the rum from the ginger using a fine sieve to prevent it becoming too gingery.
