Ingredients- 1 lb Lean braising beef
- 1 Large carrot sliced
- 1 Parsnip, cubed
- 1 oz Butter (25g)
- 1 oz plain flour
- 1 Tbsp Tomato purée
- 1 Pint Beef Stock
- 2 Bay leaves
- 1 Bouquet garni
- 6 Small shallots
- Salt to taste
- Fresh Ground Black Pepper
- 1 tsp Paprika
Directions- Preheat oven to 180 degrees C.
- Cut beef into 2 cm cubes Melt butter in casserole dish, add meat and sauté until brown.
- Add shallots, carrot, parsnips.
- Sprinkle flour over and stir thoroughly.
- Add stock, stir until smooth.
- Add bouquet garni and bayleaves.
- Season with pepper, salt and paprika.
- Put casserole in oven for about 2hrs.
- Serve with croquette or baked potatoes or freshly baked bread.
