Preparation time: 45 mins Serves 2 people Ingredients: Half red cabbage Half onion Cider vinegar Muscavado sugar Cinnamon Ground (or finely grated) ginger Cloves Red wine Calvados (optional) Method: Cut out the heart and thinly slice the red cabbage. Slice the half onion. Fry the onion and cabbage in some butter until softened. Add a large splash of vinegar, a similar amount of sugar. Then add a glass of red wine or enough to cover the mixture. Add the cinnamon, ginger and cloves. Leave to simmer gently for at least 30 minutes or up to 5 hours. Before serving add a swig of Calvados.
