Meat Loaf (or beef galantine)

Ingredients:

500g minced beef (lean Aberdeen Angus is good)

250g sausage meat

1 large shallot (chopped)

1 egg mixed with 60ml of milk

1 pinch of mixed herbs

1 crushed biscotte (or bread crumbs)

A handful of grated cheddar

For a beef galantine, you would also need 2 hard-boiled eggs which get cooked in the middle of the meat loaf

Method:

Mix the beef, sausage meat, shallot,herbs, egg and milk to form a smooth paste

Grease a loaf tin or deep ovenproof dish, sprinkle with the breadcrumbs.

Place ½ of the meat moisture in, sprinkle with cheese (slices of chorizo would be nice as well!), add the rest of the meat. 

Cover with a greased piece of foil. Stand the dish in a larger dish filled with water . Cook in a moderate oven (160C for fan oven) for about 1 ½ hr . 

Serve with gravy (or baked beans!) and vegetables.
