Pastis a la Simon

Ingredients:
Pernod (or other Pastis)
Chilled water
Lime
Absinthe (optional)

Method:
Pour a measure of Pernod into a small tumbler. Fill with water and add 2 ice cubes. Squeeze in a slice of lime and dump in the squeezed slice. If extra potency is needed add a dash of absinthe.
