Shortbread

Ingredients:
125g of unsalted butter, softened
55g caster sugar 
180g plain flour
70g chopped ginger (or sultanas  or chocolate chips)

Method: 
Preheat oven to 180C (160C for fan oven)
Lightly grease a baking tray
Cream together butter and sugar until smooth, add flour and fruit to form a dough.
Roll out on a lightly floured surface to approx 1cm thick.
Cut into 12 cookies
Place on the baking tray and chill for 20 mn 
Bake in the centre of the oven for about 18 mn until a pale golden colour.
Place on a wire rack to cool. 

Makes 12 
Preparation 20mn, chill 20mn, cook 18mn
