Lemongrass and lime sea bass

Ingredients:

Whole sea bass

Lemongrass stalk

Fresh ginger

1 small chilli

1 garlic clove

Honey

Lime

Method:

Chop the lemongrass, ginger, garlic and chilli and smash together with the lime juice and honey in a mortar. Score the sea bass and rub the mixture into the cuts and stuff the rest inside. Cook wrapped in foil for 25 minutes. Can be served with celeriac chips or cold with mayonnaise.
