- 50 g Freshly grated parmesan
- 2 Spring onions thinly sliced
- 50 g butter, melted
- 1 Tbsp lemon juice
- 1 Whole Small cooked Lobster (meat diced)
- 125 ml Crème fraîche (enough to cover the lobster meat)
Method: - Preheat oven to 180 C / Gas mark 4.
- In a small bowl, mix together breadcrumbs, cheese, spring onions, 50g melted butter and lemon juice. Set aside.
- Place lobster meat into an ovenproof dish or 2 large ramekins . Pour melted crème fraîche over lobster, and top with breadcrumb mixture.
(I bought a ready prepared lobster) - Bake for 25 minutes, or until topping is browned.
This could be used as a starter (done in individual ramequins) or main course (as pictured above) served with boiled baby potatoes and green beans. |
