Lobster au gratin

Preparation time: 10mn cooking time : 25mn
  • 50 g Dried breadcrumbs 
  • 50 g Freshly grated parmesan
  • 2 Spring onions thinly sliced 
  • 50 g butter, melted
  • 1 Tbsp lemon juice
  • 1 Whole Small cooked Lobster (meat diced)
  • 125 ml Crème fraîche (enough to cover the lobster meat)
  1. Preheat oven to 180 C / Gas mark 4.
  2. In a small bowl, mix together breadcrumbs, cheese, spring onions, 50g melted butter and lemon juice. Set aside.
  3. Place lobster meat into an ovenproof dish or 2 large ramekins . Pour melted crème fraîche over lobster, and top with breadcrumb mixture.
    (I bought a ready prepared lobster)
  4. Bake for 25 minutes, or until topping is browned.
This could be used as a starter (done in individual ramequins) or main course (as pictured above) served with boiled baby potatoes and green beans.
