Ingredients: Serves 2
1 egg
100g pasta 00 flour

Put the flour in a bowl. Beat the egg with a fork. Mix the egg into the flour a little at a time with your finger tips. Knead the dough (a lot) to build up the gluten. Wrap in clingfilm and refrigerate for 30 mins. Roll the pasta. Cook in boiling salted water for 4 minutes.
