Ingredients: - 350 g Cooking apples, peeled, cored and chopped in large chunks
- 100 g sultanas
- 1/4 Pint Semi-skimmed milk
- 175 g light muscovado sugar (or soft brown)
- 350 g Self-raising flour or plainflour with raising agent
- 2 tsp ground mixed spice (or ginger+cinnamon)
- 175 g Butter (or margarine)
- 1 Egg, beaten
- 25 g demerara sugar
Method: - Mix together apples, sultanas and sugar.
- Sieve flour & mixed spice, then rub in butter or margarine.
- Add fruit mixture and beaten egg, mix well.
- Place in a greased and lined 20cm square cake tin or oven proof dish.
- Sprinkle with demerara sugar and bake on 170 degrees for about 1hr15mn or until risen and golden brown.
- Serve warm or cold with crème anglaise, custard, cream or ice cream
