Apple Cake

  • 350 g Cooking apples, peeled, cored and chopped in large chunks
  • 100 g sultanas
  • 1/4 Pint Semi-skimmed milk
  • 175 g light muscovado sugar (or soft brown)
  • 350 g Self-raising flour or plainflour with raising agent
  • 2 tsp ground mixed spice (or ginger+cinnamon)
  • 175 g Butter (or margarine)
  • 1 Egg, beaten
  • 25 g demerara sugar
  1. Mix together apples, sultanas and sugar.
  2. Sieve flour & mixed spice, then rub in butter or margarine.
  3. Add fruit mixture and beaten egg, mix well.
  4. Place in a greased and lined 20cm square cake tin or oven proof dish.
  5. Sprinkle with demerara sugar and bake on 170 degrees for about 1hr15mn or until risen and golden brown.
  6. Serve warm or cold with crème anglaise, custard, cream or ice cream
