Ingredients- 225 g Washed red lentils
- 50 g Diced Bacon
- 1 Small onion chopped
- 1 Carrot diced
- 600 ml Stock
- Seasoning
- 15 g Butter
- 15 g plain flour
- 300 ml Milk
- Fresh Chopped parsley to garnish (to taste)
Directions- Soak the lentils in cold water for about an hour (or overnight). Drain.
- Put the lentils, onion, carrot and stock into a saucepan and add seasoning.
- Cover and simmer gently for about 1 1/2 hrs.
- Make a thin white sauce with the butter, flour and milk.
- Add to the lentil mixture, reheat, check seasoning and serve immediately garnished with chopped parsley (if liked) and croutons.
