Lentil

Ingredients
  • 225 g Washed red lentils
  • 50 g Diced Bacon
  • 1 Small onion chopped
  • 1 Carrot diced
  • 600 ml Stock
  • Seasoning
  • 15 g Butter
  • 15 g plain flour
  • 300 ml Milk
  • Fresh Chopped parsley to garnish (to taste)

Directions
  1. Soak the lentils in cold water for about an hour (or overnight). Drain.
  2. Put the lentils, onion, carrot and stock into a saucepan and add seasoning.
  3. Cover and simmer gently for about 1 1/2 hrs.
  4. Make a thin white sauce with the butter, flour and milk.
  5. Add to the lentil mixture, reheat, check seasoning and serve immediately garnished with chopped parsley (if liked) and croutons.
